CALYPSO® MANGO & AVOCADO SALSA

- 1 large Calypso® Mangoes
- 1 large firm ripe avocado
- 1/4 cup flat leaf parsley leaves, chopped
- 1 fresh lime, rind finely grated, juiced
- 1 long red chilli, deseeded and finely chopped
- 3 tsp fish sauce
- Peel and dice the mango and avocado. Place in a bowl and stir in the herbs. Combine the lime rind, juice, chilli and fish sauce. Pour over the mango and stir gently to combine.
- Allow to stand in the fridge for 30 minutes to allow the flavours to develop.
- Serve with roast pork, chicken, turkey, ham or corn chips.
Tip- Salsa will keep in an airtight container in the refrigerator for 1-2 days.
