CALYPSO® MANGO & AVOCADO SALSA

  • 1 large Calypso® Mangoes
  • 1 large firm ripe avocado
  • 1/4 cup flat leaf parsley leaves, chopped
  • 1 fresh lime, rind finely grated, juiced
  • 1 long red chilli, deseeded and finely chopped
  • 3 tsp fish sauce

Method

  1. Peel and dice the mango and avocado. Place in a bowl and stir in the herbs. Combine the lime rind, juice, chilli and fish sauce. Pour over the mango and stir gently to combine.
  2. Allow to stand in the fridge for 30 minutes to allow the flavours to develop.
  3. Serve with roast pork, chicken, turkey, ham or corn chips.
 

Tip- Salsa will keep in an airtight container in the refrigerator for 1-2 days.
