Cut the mango cheeks from the stones. Using a large spoon, remove the mango fruit from the cheeks and thickly slice the fruit.
Rub the garlic clove over the base of a large serving plate. Arrange the mango, Kumato® and mozzarella on the plate. Squeeze over the lime. Drizzle with olive oil and vincotto. Sprinkle with oregano and basil. Season well. Serve.
