Cut the mango cheeks from the stones. Using a large spoon, remove the mango fruit from the cheeks and thickly slice the fruit. Place onto a plate, cover and refrigerate until ready to assemble.
For the dressing, combine all the ingredients in a jar. Secure the lid and shake until well combined.
Just before serving, combine the mango, cabbage, carrot, green onions and mint on a large platter. Toss gently to combine. Pour over the dressing, scatter with the peanuts and noodles, and serve immediately.
TipYou can replace the peanuts with toasted silvered almonds and add coriander and bean sprouts to the salad if you like.
