  1. STEP 1Place the couscous into a medium saucepan over high heat. Cook, stirring 3-4 minutes until lightly toasted. Add the water and bring to a simmer. Once simmering, cover and cook for 8-10 minutes until the water has been absorbed. Transfer to a large bowl.
  2. STEP 2Meanwhile, heat the olive oil in a frying pan over medium heat. Add the onion with a pinch of salt. Cook, stirring for 6 minutes or until soft. Add the garlic and chilli, cook for 2 minutes. Add the vinegar, orange juice, brown sugar and raisins. Simmer for 5 minutes or until the vinegar has reduced and the raisins plump.
  3. STEP 3Stir in Treviso Radicchio and cook for a few minutes. Remove from the heat as it starts to wilt. Stir in the pine nuts and parsley. Add the Treviso™ Radicchio to the couscous. Season, stir gently to combine. Stir in the pecorino and serve.
