Cook soba noodles in boiling water according to packet instruction until tender. Drain and refresh under cold running water. Drain well. Place in a large bowl. Set noodles aside.
Whisk oil, sauce, wine and sugar together in a small jug until the sugar dissolves. Set dressing aside.
Heat the oil in large wok over high heat until smoking. Stir-fry chicken in 3 separate batches for 3 minutes each until cooked through and golden. Transfer to the bowl with soba noodles and pour over the dressing.
Re-heat wok with extra oil until smoking. Stir-fry chilli and peas for 2 minutes until just tender. Transfer to bowl with noodles and toss well to combine.
